Trimming the spears from an agave piña near Santiago Matatlan

Alipus, founded in 1997, is a deep commitment to keeping age-old artisanal methods alive by providing a livelihood for a way of working, and a way of life, that are danger of disappearing – forever – amid the changes created by the powerful, forced, and rapid transition to the modern world.

The small family distilleries, remote, reached only on dirt roads. preserve – uncorrupted – the centuries-old ways of distilling mezcal. The process is connected to the agave itself, connected to the culture of the pueblo, connected to local and regional methods handed down for generations.
