There are excellent tequilas, from both commercial (Herradura) and smaller distilleries. Anyone who
has visited a truly devoted producer, such as Cascahuin, has no doubt that you can devote true
talent and careful attention to making great tequila. All we are claiming here is that by using ancestral hand methods on agaves
that have to struggle to mature, and especially by fermenting and distilling them with the agave
fibers included, you get a richer and more profound spirit.
