RAICILLA REGIONS

There are three raicilla regions in Jalisco. Two of them have been denominated: raicilla de la Costa, grown (mostly on hillsides) along the coast, and raicilla de la Sierra, grown in the Sierra Madre Occidental mountain range that runs down the western side of Jalisco. Raicilla del Llano, not denominated, comes from the inland agricultural plateau.

Raicillas del Llano are mostly from cultivated agaves such as agave angustifolia, which in Jalisco is closely related to the blue agave Weber of tequila.

The agaves used in the de la Costa region are mostly wild/semi-wild angustifolia and rhodacantha

The agaves used in the rugged de la Sierra region are mostly wild inaequedens and Maximilana.
