SOTOL DESIERTO and SOTOL DURANGO
Sotol grows not only in the open desert but also in the more wooded uplands and mountains. Desierto sotols tend to be mineral, feral, spicy, intense.
Sierra sotols are broader, softer, even mossy, sometimes with hints of eucalyptus. The Balam Durango and the Mexicat Artesanal are mountain sotols. The mountain plant, called cedrosano, is larger, distills with more complexity, and the local wild yeasts are of course different as well.
